What material electrodes should be used for fatty acid media?

I recently worked on a project that involved the use of electromagnetic flowmeters, with hot fatty acids as the medium. I’m not sure whether C electrodes or tantalum electrodes would be more suitable in this case
I really don’t have any ability in this regard; someone downstairs can handle it.
I’m not familiar with fatty acids, but when making a selection, at least the type of medium should be specified (which fatty acid?) ), operating temperature (hot, how hot? ), work pressure, range, flange, right
