I think the difference is quite obvious: grinding primarily emphasizes the action of grinding, while chipping mainly emphasizes the action of cutting.

Grinding means to crush and grind something, while chipping means to level or shape something
Grinding places more emphasis on the action of grinding, while chipping emphasizes the action of chiseling; this is the biggest difference between the two.
