Calculate Cv and select Cv

I would like to ask why the Cv value calculated each time a valve is selected differs so significantly from the selected Cv value
Valve manufacturers all have a Cv series of values; based on the calculated Cv value, a standard Cv value from that series that is greater than the calculated value is selected, and then it is verified using this selected Cv value that the maximum opening degree of the valve should be around 80%.
