Horse-hoof cake is a traditional specialty pastry from Jiangyin. At the end of the Qing dynasty, it was modeled after a pastry with the same name from Zhenjiang, and then improved by using flour. This product is made from high-quality flour and adzuki beans as main ingredients, with nuts used as supplementary ingredients, and it is produced through the fermentation of glutinous rice. It gets its name because the finished product is thick around the edges and thin in the middle, resembling a horse’s hoof. It is characterized by being crispy, fluffy, and soft at the same time, with excellent color, aroma, and taste.
A specialty of Jiangyin: sweet but not cloying, delicious in taste, crisp when eaten, and round in shape. I loved it as a child and still enjoy it today; it’s an essential snack that’s truly very tasty
