\"Yunlin\" Hei Du wine, a typical representative of Jiangyin’s Hei Du wines, is made from glutinous rice. It has a consistency similar to glue or ink; it emits a strong fragrance when smelled, and its taste is sweet without being cloying. It is rich in amino acids, proteins, and various trace elements, making it easy to absorb. It has benefits such as regulating qi and nourishing blood, relaxing muscles and tendons, as well as strengthening the spleen and improving appetite. Drinking this wine helps to nourish the blood and strengthen the spleen; it is often used by pregnant women after childbirth to regulate their menstrual cycles and promote blood circulation. For these reasons, it is considered one of the famous wines of the Jiangnan region. It is said that the eighth day of the second lunar month is the day when people in Jiangyin go to the market, and on this day, merchants from various places gather around the south gate of Jiangyin. The locals will prepare the “Yunlin” black Dou wine, which has been stored for many years, to entertain their relatives and friends who come to the market. Over time, it became a local tradition in Jiangyin for people to drink the \"Yunlin\" black Du wine on the eighth day of the second month; this practice spread throughout the Jiangnan region. Moreover, when scholars and literati were in high spirits after drinking wine, they would write down the phrase \"On the eighth day of the second month, at the South Gate, black Du wine.\" Due to its high nutritional value and its ability to nourish the stomach and remove impurities, the \"Yunlin\" Hei Du wine once became an excellent tonic for women after childbirth in times of material scarcity. Passed down to this day, the \"Yunlin\" Hei Du wine has become one of the most representative products among Wuxi’s specialties, and is highly favored by the general public for its unique taste and nutritional value.
It is said that this wine was also created by Du Kang. After he produced the famous \"Du Kang Wine\" using grains such as sorghum and corn in his hometown, he traveled around the world with his friend Liu Ling, arrived in the Jiangnan region, and settled in the east of Jiangyin city. Dukang is a rice wine made by fermenting glutinous rice from the Jiangnan region after steaming it; it has a rich and sweet taste, making it more suitable for people in the Jiangnan area to drink. One day, while Du Kang was steaming glutinous rice, Liu Ling came to visit. Preoccupied with meeting his friend, Du Kang ended up burning the rice meant for brewing wine. Realizing it was a shame to waste it, the two decided to use that rice to make wine instead. Not wanting this type of wine to possess only the characteristics of rice wine, with its strong aroma, but also to have the benefits of enriching blood, strengthening the spleen, and improving appetite, it was named \"Black Wine\". This is why there is the story of \"Drinking three bowls of Jiangyin Black Wine can knock Liu Ling out for three days.\" Jiangyin black liquor has an alcohol content of around 13 degrees; it is rich and full-bodied, sweet and smooth, as well as nutritious. Its unique flavor has made it highly popular among the people in the Jiangnan region for a long time. During festivals, households here always serve this fine liquor to their guests.
Method: There are generally two ways to warm wine; one is to place the wine container in hot water to heat it up, and the other is to warm it over a fire. Generally, warm drinks are popular in winter. However, yellow rice wine should not be heated for too long, otherwise the alcohol and ethanol will evaporate, making it bland and tasteless. Also, alcohol is too hot and can damage the lungs if consumed. Therefore, the ideal temperature for hot wine is generally 40–50 degrees, with a slightly higher temperature above 50 degrees also being acceptable. Features: Rich wine aroma with a mild taste. Reason: The boiling point of methanol in alcohol is 64.7°C, that of acetaldehyde is 21°C, and that of ethanol is 78.3°C. When heated, these substances evaporate to a large extent, thereby reducing the harm that alcohol can cause to the body of those who drink it.
