Xiujuan’s soy sauce truly lives up to its reputation; it gives seafood a delicious flavor. My son doesn’t like any seafood; since he was little, he’s only liked mussels. Mussels don’t taste good if not cooked with chili. To get him to eat mussels, I cook two types each time: one with chili and one without. Additional ingredients: Appropriate amount of salt, 1 teaspoon of oyster sauce, 1 bunch of cilantro, 15 grams of Liu Yue Xian soy sauce. Instructions for cooking spicy stir-fried mussels: 1. Soak the mussels in water after buying them, and wash them again before cooking. 2. Wash the mussels once, then shake the bowl while holding them in your hand to wash them further; repeat this several times to remove all the sand. 3. Heat an appropriate amount of oil in a pan until it’s 60% hot. 4. Add the dried chili and let it release its aroma. 5. Add the mussels and stir-fry them. 6. When the mussels start to open slightly, pour in the Liu Yue Xian soy sauce and stir well, then add the oyster sauce. 7. Continue stir-frying until all the mussels are fully open. Add a little salt, stir well, then add the cilantro before serving. 8. Eat the mussels while they’re still hot; they will become fishy if they cool down. Cooking tips: 1. Try to buy larger mussels as they have more meat. 2. Be sure to choose fresh mussels. 3. Seafood already contains salt, so only need to add a little salt
