Instructions: 1. Wash the firm tofu, cut the pineapple away from its hard core, slice it, and soak it in lightly salted water for ten minutes before draining the water. 2. Use kitchen paper to absorb the excess moisture from the surface of the old tofu, then cut it into small pieces. Cut the pineapple into small pieces. 3. Heat the pot, add oil and heat it up; then put in the ginger slices and sauté over low heat until they release their aroma, after which remove them and discard. 4. Add the old tofu cubes to the pan and fry them over medium-low heat until their surfaces turn golden brown; then remove them and set aside. 5. Use the remaining oil in the pan to sauté the tomato sauce over medium heat for half a minute. 6. Pour in half a small bowl of water and bring to a boil. 7. Pour in the tofu that was cooked in Step 4, add salt and sugar, and stir-fry for two minutes to allow the tofu to absorb the flavors. 8. Add the pineapple chunks and stir-fry for a while. 9. Finally, pour in about two tablespoons of thin water starch, stir well, and cook until the sauce thickens enough to coat the surface of the tofu and pineapple.
