Use armored thermoresistors/thermocouples, either by directly incorporating them into the corresponding jacketing components or by connecting them directly to the jacket
Flange connection is used, with the short tube extending out of the jacket; that is, the flange surface is located outside the jacket.
At the temperature measurement point, the pipes before and after can be connected using a tee + flange; then a flange cover is installed at the other end of the tee (which must be above the jacket layer), with holes in it for attaching connectors and the temperature sensing element
