What is an emulsification tower?

What is an emulsification tower? And what about that π-shaped tube arrangement for drainage below the tower? The book states that it is mainly through the height of the π-shaped tube that a certain liquid level is maintained inside the device, thereby preventing gas from being carried away along with the discharged liquid. But that π-shaped tube is bent upward, so how can the liquid stay inside it? I remember that in our university organic chemistry experiments for extracting berberine using yellow powder, we used some kind of device; it was something where an alcohol lamp was used to vaporize the alcohol in the lower container and send it to the upper container. The upper container had only one outlet on its side, and once the alcohol condensed in that upper container, it could flow back down to the lower container only through that outlet.
