There should be no effect. The solubility of sodium nitrite increases with temperature. It will decompose when heated to 320 degrees. However, it is easy to deliquesce if exposed to moisture for a long time, and will be oxidized to sodium nitrate when exposed to air.
When sodium nitrite dissolves in water, the temperature will not be too high. Sodium nitrite is one of the few that undergoes an endothermic process when dissolved in water, that is, the heat of dissolution is negative, and the temperature of the aqueous solution drops after dissolution.
