I think it’s better with a baffle for separation, but why do some have one? Is there a lack of a baffle in some? Are there any other downsides to adding a baffle?

The baffle at the bottom of the tower is primarily intended to prevent excessive local pressure at that location from causing damage to the components inside the tower. If there is a large amount of vapor in the flow exiting the reboiler, a baffle is usually necessary; if the amount of vapor is small, it may not be necessary, depending on the specific circumstances. This is especially true for smaller towers, or when the outlet of the reboiler is located far from the last tray at the bottom of the tower. If there are two reboilers arranged symmetrically, baffles may also not be needed. Baffles help to distribute the fluid more evenly, but they do cause some pressure loss. If not designed properly, they can affect the overall pressure drop across the tower
The distillation column bottoms of our units equipped with thermosyphon reboilers do not have baffle plates, and I haven’t heard of any advantages or disadvantages associated with this; it is likely that there is no significant impact.
Generally speaking, it is better to add it than not; with the baffle in place, the vapor-liquid mixture moves downward first, and the liquid has a downward velocity, which improves the separation effect.
