The table of materials indicates the length of each pipe, but for some of them, the length isn’t visible in the piping diagram. For example, some pipes run from the second floor to the first floor, taking many bends, and since there are no elevation views available, it’s not possible to determine their length. What should be done in this situation? Thank you!

There should be an elevation view or an axonometric view (ISO), or the elevations should be indicated.
As long as the plan view of the piping system shows accurate planar coordinates (the relevant planar positions and distances) as well as elevations, it is possible to calculate the length of the pipes.
Find the elevation from the drawings; the pipe length can be calculated using the elevation and coordinates
The length of the vertical pipe can be calculated from the elevations of the two horizontal pipes on that pipe
Use the query tool in CAD to find out its length, then check the scale or elevation – that will allow you to calculate it.
