It was boiled in steam for 2 days, then washed with vinegar, and afterwards treated with dough. But I still don’t understand why the manager uses vinegar for cleaning and dough for inspection.

It is because oil is released during vinegar washing, and the flour can absorb that oil.
Mm-hm. Washing with vinegar, for the dough – it’s about removing as much residual oil as possible, including the oil that has penetrated into the steel sheet, by sucking it out.
Why not ask the supervisor, but instead hold it in and ask online? It’s not shameful to ask questions.
I don’t understand either why one has to use vinegar and plain dough for cleaning; aren’t there many detergents that are effective at removing grease these days?
Can detergents affect the equipment? Or could there be residues that affect subsequent liquid storage?
The safety awareness and work attitude of your leaders are worth learning from; safety work must be handled with caution to ensure reliability.
