You are so meticulous; we simply weld the channel steel directly to the stainless steel, without using any gaskets. The welding of the channel steel can be carried out using the intermittent welding method with reinforcing rings.

If some shims are used, it reduces the reinforcing strength; there’s no need to use them.
It depends on the purpose of this channel steel installation. If it isn’t used to reinforce the tank but merely to support and fix the mixing equipment, then there’s no problem
