It should be determined based on the medium and pressure as well as the flange face type
Check Appendix A/B of HG20583-1998 for the commonly used gaskets for petrochemical pressure vessel flanges/closely related to commonly used gaskets for petrochemical pipe flanges; the information there is quite clear and can be used as a reference right away.
