Dear experts: Sodium metabisulfite serves an antioxidant function, but I am not very familiar with its properties and mechanisms. I would appreciate your guidance: Does anyone know the solubility curve of sodium metabisulfite in aqueous solution? Could you please provide some information on this? When sodium metabisulfite decomposes in water, it turns into sodium bisulfite – is this reaction fast or slow? Is it endothermic or exothermic? Is a certain temperature required for this process? Sodium bisulfite also has antioxidant properties, but perhaps more potent ones. Sodium metabisulfite tends to decompose when exposed to moisture; is the decomposition process similar to its dissolution in water? If both sodium bisulfite and sodium metabisulfite exist as sodium bisulfite in water, can either one be used as an antioxidant? Thank you all!
Sodium pyrosulfite, when mixed with water, becomes sodium bisulfite; sodium bisulfite, when dehydrated, turns back into sodium pyrosulfite
Basically the same; sodium bisulfite has higher purity and a higher price. The verification questions are too difficult and too troublesome.
