My classmates are coming to my house for dinner tomorrow night, and I want to make braised pork. I’m not sure how to prepare it so that it tastes better, and I hope it won’t be too greasy. Thank you all for helping me find a way to do this
I don’t know about the other options; it probably can’t be eaten raw, right?:lol. Just joking. In my hometown, there is a way of preparing meat that I hope might be adopted. 1. Wash the pork with a mix of lean and fat parts, then cut it into pieces about 5 cm square. 2 Prepare all the ingredients needed for stewing meat: use two types of soy sauce, dark soy sauce for coloring and light soy sauce to enhance the flavor. 3. Put the cut meat pieces into the pot with cold water, and blanch them over high heat. 4. Take out the meat pieces that have been blanched and set them aside. 5 Add cold water to the pot again, then insert scallion segments, ginger slices, and garlic cloves; bring to a boil over high heat. 6 Once the water is boiling, add the meat pieces to the pot, along with dried chili peppers, Sichuan pepper, star anise, and bay leaves. Add an appropriate amount of dark soy sauce and light soy sauce, cover the pot, and simmer over high heat for about 15 minutes, then reduce the heat and cook for another 60–75 minutes. Once done, turn off the heat and let the meat soak in the broth to absorb more flavor. When ready to use, take out just the amount needed; the rest can be left to cool naturally before being stored in the refrigerator or freezer. 7 Take an appropriate amount of dried string beans and soak them in water. 8 Take out the frozen meat pieces, thaw them slightly, and then cut them into thin slices. 9. Cut the soaked dried green beans into small pieces, place them in a large bowl, and sprinkle a layer of salt evenly over them. 10 Place the sliced meat on top of the green beans. 11 Add an appropriate amount of cold water to the pot, place the steaming bowl on the steamer rack, bring the water to a boil over high heat, then reduce the heat and steam for about 25 minutes. 12 Prepare the sauce by mixing salt, sugar, soy sauce, and sesame oil together with chopped green garlic. After the steamed dish is ready, spread the sauce evenly over it, cover it with the lid and let it rest for a while before serving.
