I’m not sure what this stearic acid is; does anyone among the forum users know anything about this chemical? I always feel that there’s something wrong with the ramen they make – it’s too chewy, and no matter how much you pull on it, it doesn’t break. .

Molecular formula: C18H36O2. Physical and chemical properties: A white to slightly yellow, slightly shiny crystalline solid or powder, with a faint distinctive aroma and a taste similar to beef tallow. Melting point: 69.6 degrees, boiling point: 383 degrees; insoluble in water, soluble in ethanol and chloroform. Uses: lubricant, defoamer.
