The quality is fine; how could stainless steel rust?
Clean it thoroughly and keep it dry when storing, and store it away from iron objects.
The most reliable method is to apply a layer of plastic film right after polishing. If no such film is used, and there is any processing of carbon steel around the stainless steel sheet, such as cutting or welding, iron ions will be present in the air; over time, these ions will settle on the stainless steel surface and cause rust spots to appear
Grind using a special grinding wheel for stainless steel
If iron has seeped in, polishing is of no use; it will appear again in a few days
