What is the product of the reaction between adipic acid and glycerol?
Acids and alcohols react to form esters, and different products are produced depending on the ratio of the reactants, reaction conditions, and other factors.
Is it true that when polyester polyols are produced, all hydroxyl and carboxyl groups react completely?
It generally does not respond absolutely completely. It seems that polymer chemistry has a dedicated chapter on polycondensation reactions. There are also those dedicated to polyesters.

Even in single-molecule reactions, the products are not fixed; different reaction conditions yield different products. It may be significantly affected by the reaction temperature and the catalyst.
