The beginning of the golden decade for China’s baijiu industry. The growth of national wealth, the upgrading of consumption patterns, and increasingly frequent social interactions are all contributing to a rising demand for baijiu. Data shows that China’s baijiu production reached 8.91 million tons in 2010, an increase of about 186% compared to 2004. Among them, the production and sales of mid-to-high-end baijiu products have seen the fastest growth, showing a prosperous trend. Many baijiu manufacturers have taken various measures to expand the production capacity of mid-to-high-end products. Overall, however, the supply of mid-to-high-end baijiu products is still growing slowly. At present, a few have already put several mechanical automation production lines into operation. The reporter observed that throughout the entire wine production facility, there was no longer any sign of workers sweating profusely in a dirty environment. In each mechanized production workshop, just 4 or 5 workers are needed to carry out monitoring and adjustments, which is sufficient to ensure the smooth completion of the entire production process. Since the second half of 2012, the market size for high-end baijiu has shrunk due to factors such as alcohol bans, stricter regulations on official expenditures, and the plasticizer scandal. The liquor industry has ended its golden period of development, and the entire sector has entered a phase of structural adjustment. However, during the adjustment period, the rigid demand for baijiu became increasingly evident, and the high-end baijiu market continued to show an upward trend. Data shows that the production of baijiu in 2013 reached 12.262 million liters, an increase of 6.33% compared to 2012. According to data from the **Statistics Bureau, per capita consumption of baijiu is on the rise year by year; by the end of 2013, the national per capita consumption of baijiu (converted to 65 degrees alcohol content) had reached 8.57 liters per year. As urbanization progresses further, **the implementation of urban development strategies will continue to boost purchasing power, and an upward trend in the baijiu market can still be expected. The application of modern technology in baijiu production not only creates a more favorable working environment but also leads to immediate improvements in quality and efficiency. The adjustment period is an important time for making thorough changes to the product structure and production methods; baijiu manufacturers should actively pursue innovation and transformation in order to stimulate new demand and purchasing enthusiasm, while also preparing to seize opportunities when the market recovers. Actively adjusting and reforming brewing processes and management techniques are the measures that baijiu companies should take to get through tough times. Domestic pressure transmitter manufacturers state that in brewing processes, a large number of pressure instruments, level instruments, and flow meters are used: Pressure (gauge)/absolute pressure transmitters measure pressure signals with atmospheric pressure/vacuum as the reference point, and they have only one port connected to the process pipeline. The working principle of metal capacitive pressure (gauge pressure/absolute pressure) transmitters is as follows: when pressure acts on the surface of the metal sensing diaphragm, which has a certain thickness and serves as the elastic sensing element, through the isolation diaphragm and the pressure-transmitting medium, this causes a slight deformation in the diaphragm; the maximum deformation does not exceed 0.1 mm. A high-precision measurement circuit converts this slight deformation into a voltage signal that is linearly related to the pressure difference. After linearization and temperature compensation, a dedicated chip is used to convert this voltage signal into an industrial standard 4-20 mA current signal or a 1-5 V voltage signal. Thanks to the high sensitivity of the metal capacitive pressure sensor and the high-precision integrated circuits used in the sensing diaphragm circuit, which include linear and temperature compensation circuits, the entire transmitter achieves high precision and stability. Its extremely high overload resistance and outstanding performance in micro-pressure measurement make it an essential product for use in China’s complex industrial environments. In traditional wine-making methods, the fermentation vats have an earthen floor, and the yellow liquid can only be discharged directly. It once posed difficulties for many companies. A series of process developments and modifications were also carried out in this regard; the soil base was replaced with a concrete-cast cement base, which prevented the leakage of yellow liquid during the fermentation process. This liquid is then collected uniformly through stainless steel conduits for secondary recycling. Mechanized production lines further enable the recycling of yellow water. The reporter learned that fully enclosed cellars are used in the mechanized production lines, and all the yellow water generated during the production process can be extracted and recycled, which greatly improves the efficiency of using this liquid and prevents it from having an adverse impact on the environment. Our journey toward fully automated wine production has just begun; we will invest more in research and development and make further innovative attempts. Integrating ancient and modern techniques in harmony to achieve modernization of production is the direction and approach for the modernization of baijiu production today. Behind this change lies a strong driving force for another round of technological advancement in China’s baijiu industry, which could even open up even broader possibilities.
