Recently, Sichuan hot pot has become popular. Friends from other places who like spicy food also enjoy spicy hot pots. Do you know what the difference between these two is?
Mao cai is cooked, while spicy hot pot is stir-fried

Mao Cai is a bit like hot pot, except that the ingredients are cooked together first and then seasonings are added; in Ma La Xiang Guo, the vegetables and seasonings are stir-fried together before being eaten.
Mao Cai? I’ve really never heard of it; I’ve eaten spicy hot pot many times, though.
