How are relay systems compared to PLC systems?

Hello everyone, our factory has a submersible pump. The relay system is designed to control and protect the pump. That being said, after 25 years of operation. Almost no one in the entire factory understands how the entire relay system works and what its principles are. I have a background in process engineering. Knowledge in this area is very limited. Want to know what to do next? Should the entire system be drawn as a circuit diagram? Should we just switch to a PLC system instead? How should relay systems and PLC systems be compared to determine which is more suitable? Thank you
