It’s probably because the ignition point of stainless steel is higher than its melting point, so it cannot be cut using gas cutting
Wrong. Carbon steel gas cutting is actually a process in which iron burns in oxygen and is blown away as slag—the ignition point of Fe is lower than its melting point. Stainless steel has a higher melting point than its ignition point due to the high content of Cr (as well as Ni)
