How can one understand flow control?

In a PID flowchart, only some simple control relationships can be understood. But there are still some things I don’t quite understand, such as the control relationship of the pump’s switches? I majored in chemical engineering processes; what knowledge related to instrumentation do I need to acquire?
If you understand the control schemes proposed for the process, why do you still need to know so much about instruments?
