The temperature measurement principles of the two are different. A thermistor measures temperature based on the principle of changes in resistance at different temperatures, while a thermocouple measures temperature by taking advantage of the change in contact potential between two different materials at various temperatures. The potential value is very low, which makes thermocouples suitable for measuring high temperatures; they are generally used when temperatures are above 600 degrees Celsius.
