I want to measure the temperature of the pipe wall. Is there a good method for pipes with a DN20 diameter? If I use a thermistor attached to the pipe wall, do I still need thermal paste or something similar? Do I also need insulation material to protect it?

There are portable surface temperature meters designed specifically for measuring surface temperatures; infrared thermometers can also be used (with a relatively larger degree of error).....
The temperature reading from surface-mounted sensors is slightly lower than that from inserted sensors; in any case, it is essential to maintain insulation, and the insulation layer should be thick enough.
A plug-in surface thermistor or thermocouple will suffice; they cost only a few hundred each. The pipes must be insulated, and the sensing element must be covered with an insulating layer.
