Temperature after flue gas quenching

I would like to ask whether the flue gas after the boiler can be cooled further once it reaches its saturated temperature I did the calculations for the flue gas temperature dropping from 260 degrees to 80 degrees, and I think 80 degrees is still a bit high
Why lower it to such a low level? Doesn’t it mean that too low temperatures prevent things from rising, prevent dust and smoke from dispersing, and are thus harmful to the environment?
