The air lines for the control valves were previously made of copper; can they be replaced with stainless steel pipes? Do they use the same ferrule connectors? Is the air source ball valve the same?
Sure, it can be replaced, but the fittings and ball valves definitely need to be changed – copper fittings cannot hold onto stainless steel.
The standards are the same, but they cannot be substituted for one another; using copper in place of stainless steel can easily lead to leaks
Like connectors, I personally prefer copper tubes; copper is softer than stainless steel, which makes sealing easier – that’s just my opinion!

We used to swap them around casually. It was later found that the copper caps were prone to breaking, so at least the copper caps were replaced with stainless steel

Promoting stainless steel! Soft red copper provides good sealing, but it leaks air once it deforms slightly! As long as you buy a stainless steel matching intermediate connector, the terminal connector can be replaced!
