Is low-flow nitrogen protection maintained from startup, with the burner running, all the way to shutdown when it is turned off? Should it be turned off after driving as well? Should it be started again when preparing to stop, and the process burner removed after stopping, or should it be turned off once the furnace temperature drops to around 600°C?

Low-flow nitrogen protection is intended to ensure safety during operation, and it can be turned off once the operation is complete.

If you don’t want to make consecutive bets, there’s no need to turn it off; it’s safer that way. However, most plants require continuous operation; therefore, after stopping, it needs to be turned off within about 30 seconds to maintain the furnace temperature.
