Freshly cooked, it is filled with a delicious aroma, tastes salty and savory, and is suitable for people of all ages. Making steamed rice with meat is actually very simple: pork belly is used as the main ingredient, along with rice flour, and then it’s steamed until done. Steamed pork in rice flour (also known as meat in rice flour) is a traditional Chinese dish served to guests. Steamed pork in rice flour is sticky and fragrant, crisp and refreshing; it has a rich flavor profile featuring softness, tenderness, sweetness, aroma, and saltiness, and it is gentle on the stomach. It is made from lean meat with the skin, rice, and other seasonings as the main ingredients. “\"Steamed pork with rice flour\" contains both lean and fatty parts, featuring a red and white coloration; it is tender without becoming mushy, with a moist rice-flour texture and a strong flavor profile with five distinct aromas. When ready, it is served with old lotus root at the bottom; it has a pink color, is soft and sticky, and has a delicate fragrance, which adds to its appeal. “\"Steamed pork with rice flour\" was once very popular in Mianyang Prefecture (including Tianmen, Honghu, Qianjiang, and Mianyang). This region is known as the \"hometown of steamed dishes,\" and it is one of the famous \"Three Steamed Dishes of Mianyang.\" The story of “Mianyang’s Three Steamed Dishes” is even more well-known everywhere. Steamed pork in rice is a famous specialty dish with a high reputation in Hangzhou. It originated in the late Qing Dynasty; it is said that its name is related to \"Curved Courtyard with Lotus Flowers,\" one of the \"Ten Scenic Spots of West Lake.\" “\"Quyuan Fenghe\" is located at the northern end of the Su Causeway; there are many lotus flowers here. During the hot summer months, a gentle breeze carries the scent of the flowers, providing a cool and refreshing atmosphere that makes visitors want to stay longer. “\"Steamed Pork with Rice Flour\" was created by the chefs in Hangzhou’s restaurants at that time, in order to meet the needs of tourists who came to enjoy the scenery during the summer. They used fresh lotus leaves from the \"Quyuan Wind and Lotus\" garden to wrap cooked fragrant rice flour along with seasoned pork, and then steamed it. It has a delicate flavor, is tender and soft without being greasy, making it an excellent choice to eat in the summer. Later, as the fame of West Lake’s scenic spot \"Quyuan Fenghe\" spread, \"Steamed Pork with Powder\" also gained increasing popularity and became a famous specialty dish in Hangzhou. How to make steamed pork in rice flour? Ingredients: 1 piece of pork belly (400 grams), 100 grams of homemade five-spice rice flour, 3–4 small potatoes, 1 piece of ginger, a small bunch of green onions. Seasoning: appropriate amount of salt, appropriate amount of black pepper, 1 teaspoon of cooking oil, and half a bowl of water. Instructions: 1. Wash the pork belly and cut it into thin slices with the skin on; peel the potatoes and cut them into small pieces ; 2. Cut a small piece of ginger into as fine shreds as possible, and chop green onions into strands ; 3. Put the meat and potatoes in a bowl, add minced ginger and all the seasonings except water, mix well, then let it sit for 30 minutes to allow the flavors to infuse ; 4. Pour the rice flour into a bowl, gradually add clean water, and mix it together with the meat slices and potatoes, allowing the rice flour to absorb the water little by little ; 5. Line the steaming tray with steam-proof cloth or paper. Evenly spread the prepared potatoes at the bottom; after that, arrange the meat slices on top of the potatoes, and cover everything with the remaining rice flour from the bowl ; 6. Place the steaming tray in the pot, add enough water to the bottom of the pot, turn on the heat, and steam over high heat for 60 minutes (if using a pressure cooker, about 20 more minutes of steaming are sufficient after the pressure builds up) ; 7. Sprinkle with green onions and it’s ready to eat. Tip 1: I use steamed rice noodles that I’ve fried and ground myself; they have a five-spice flavor. You can find the recipe here. Those who don’t like spicy food can avoid adding chili peppers and Sichuan peppercorns when frying the noodles. 2. If you like steamed meat with the flavor of fermented bean paste, you can dissolve a small piece of Wangzhihe red fermented bean paste in water and mix it into the rice noodles; however, no salt should be added when seasoning, as the fermented bean paste is already salty enough. 3. Potatoes require a long cooking time, but for steamed pork with potatoes to be delicious, the meat needs to be steamed until it becomes tender and melts in the mouth; therefore, the steaming time should be longer. If 60 minutes don’t seem enough, you can extend the time further, but make sure the water in the steamer doesn’t run out. The key to the excellent cooking results of steamed rice with fillings lies in the significant role played by the rice flour used as an ingredient. Its functions are: 1. Absorb greasiness. Although rice flour is just an ingredient, it plays a role in enhancing the flavor of dishes by blending flavors, complementing them, serving as a backdrop, and highlighting the natural taste of the main ingredients. At the same time, it maintains a clear distinction between the main and secondary elements, ensuring that neither overshadows the other; the combination results in a synergistic effect. Steaming rice noodles together with fatty meat ingredients reduces greasiness; it preserves the fresh and flavorful taste of the meat while also turning the otherwise bland rice noodles into something delicious. Hence, there is a saying that \"when rice noodles are steamed with meat, the noodles have a more delicious taste than the meat.\" If lean beef, mutton, pork ribs, as well as fish and shrimp are used, it is necessary to add an appropriate amount of vegetable oil to the sauce to compensate for the lack of fat in these ingredients, prevent the dish from becoming dry, and ensure that it remains moist and tasty. 2. Retain moisture. If steamed using vegetable ingredients with high water content, the rice flour will absorb the moisture released by the vegetables when heated, thereby preserving the vegetables’ fresh, crisp, and fragrant qualities while also adding a sticky texture. When combining rice flour with vegetables, adding some cooked lard to the seasoning enhances the aroma and improves the result.
