Issues with the version of the standards used in product production?

Currently, many products may require standard updates due to their long production cycles. Which date is used for the actual execution? If the version number is specified in the design, it will naturally be based on that specified version number; if it isn’t specified, then the latest version will be used. Does this \"latest\" refer to the date of contract signing or to the date when the product is manufactured or tested? Are there any clear regulations in the industry?
Taking the date of implementation of the standard version as a boundary, the old specifications should be applied until that point. General standards all have transition periods.
I mean, what time frame should be used to determine this date? Once the date is determined, it will be carried out as you said.
