White sugar, how expensive is rock sugar? . .
Tanghulu does not refer to those made with rock sugar; the reason is that in the north, Tanghulu is usually available only in winter, and its sugar coating is as crystal clear as ice and quite cold as well. They are available all year round now, but eating tanghulu in winter feels the best. I buy them every time I go home for the New Year, even though I’m no longer a child.

Authentic tanghulu does not use white sugar; here we call it sugar syrup, which is the kind of sugar produced by fermenting malt and then boiling it. Some use white sugar now, while others use a little brown sugar for coloring
