Piping diagram Valves

I’ve just started learning about process piping diagrams, and I’d like to ask for some help. How is the process flow determined? Also, regarding the various valves shown in the piping diagrams, when should each type of valve be used? In other words, I don’t understand how to select and add valves. Are there any standards or reference materials that I can consult? ? ?
