This can’t be right; lotus roots are rich in polyphenols, and once cut, they turn black very easily due to oxidation in the air. It should be cut using stainless steel or bamboo slices; first, soak it in clean water, then drain the excess water. Submerge it in boiling water for a moment, immediately take it out and rinse it in cold water, before proceeding with frying. Use medium heat for frying, adding an appropriate amount of hot water while frying.
