Is it possible that the positive and negative terminals are reversed?
First, check whether there is an open circuit in the thermocouple cable!

Use a multimeter to measure the mV value output by the thermocouple; a value of 0 mV may indicate an open circuit in the thermocouple, or a fault in the display section.
Based on your description, it’s unlikely that a single thermocouple wire is damaged or that there’s an issue with the circuit, as you have 6 of them installed; it would indeed be worth checking to see if the wiring is connected incorrectly
