It’s certain that the two materials differ in terms of price and performance; whether to use one as a substitute depends on the specific operating conditions – choose the cheaper one if that’s appropriate, or the more expensive one otherwise. If there is no requirement for it, then why create various stainless steels such as 304, 316, and 321?
316 contains molybdenum, which gives it better corrosion resistance in non-oxidizing acids compared to 321; the media in which each of them can be used are different.
