The sequence for turning off the burner and extinguisher nozzles in the heating furnace is different from normal operation

The book states that to prevent tempering, when shutting down the burner, one should first close the air valve and then the fuel gas valve. Don’t we usually stop the fuel gas first in our operations? What do people actually do? Is what the book says reasonable? Thank you to all fellow sailors
First reduce the air flow and gas supply, then stop the air flow, and finally stop the gas supply
