It’s used as an attachment on the boiler flue baffle; I’m not sure what it is. I want to buy one as a spare, but I don’t know its name

It’s very likely to be a gas lock valve; it’s not possible to tell from the photos whether there is a gas line that is directly connected to the gas supply. If such a line exists, then it can be confirmed as being a gas lock valve. In the event of a failure in the gas supply, this valve helps to maintain the condition of the gas line, thereby preventing accidents caused by that failure
Things like air lock valves are more complex; the common type has 3 ports.
