Hehe, beef noodles with cilantro? I neither support nor oppose it. But authentic beef noodles are served with green onions, which help to cut through the richness! ! !

Authentic Lanzhou beef noodles are characterized by five elements: red, green, white, yellow, and clear. The red color comes from chili oil; fresh green cilantro and garlic sprouts float on top of the soup. A few slices of white radish add a touch of purity amidst the red and green colors. The noodles are bright and yellow in color. Although the beef soup is made with more than a dozen different seasonings, it remains as clear as plain water. So how can there be beef noodles without cilantro?
