Gentlemen, when measuring steam temperature, we usually use bimetallic thermometers made of carbon steel. What exactly is this \"carbon steel\" material?

Are there also stainless steel versions for measuring steam temperature?
Stainless steel is definitely useful, such as 316L
If stainless steel is available, use it; carbon steel looks ugly, and the price difference isn’t significant. These days nickel is cheap, the materials are inexpensive, but labor costs are high.
