Sure. But if the original one is working fine, it’s recommended that you don’t change it. Because using a different method of measurement could lead to various problems, and such a change would likely require altering the way the instruments are installed; this can be quite troublesome if the equipment doesn’t have the necessary provisions for that.
The tuning fork switch is fine. For radar level gauges, it is necessary to consider whether the level fluctuations are too large; if there is significant disturbance due to liquid inflow and outflow, I think double-flange types are a better choice.

There’s basically no liquid level in the liquid separation tank of the torch system. The current level gauge isn’t showing any major issues, so it can just stay as it is

There’s nothing wrong with the tuning fork. Microwave radars are relatively difficult to work with; when used in the right operating conditions, they perform perfectly. Guided wave radar could be tried.
