I usually add the dumplings once the water is boiling
Hot water is better; using cold water requires a longer soaking time, which can cause the dumplings to swell, and once cooked, the pot will be filled with filling. If you don’t believe it, give it a try! Hehe
Boiling water is definitely the best option; remember to add some salt. This way, the dumpling wrappers won’t tear easily, and the filling will stay contained inside.
