Octagonal pads, oval pads, and lens pads are all so hard and completely inflexible – how can they be used as gaskets?

To be honest, in some applications it’s not necessary to use metal gaskets; they impose high requirements on the flanges as well as on the bolts. The cost is also high. Using gasketing would result in a lower relative cost.
The hardness of the gasket material should be lower than that of the flange material; this is especially true for the pipe ends of equipment. If the precision of flange fabrication is inconsistent, leaks can easily occur.
Metal ring gaskets are generally sealed using wire, and they require high precision in manufacturing as well as high surface smoothness; however, their sealing performance is excellent, especially under high temperature and pressure conditions

Octagonal gaskets with precisely manufactured dimensions and tight fit provide a better sealing effect than wound gaskets! High pressure is preferred for use!
